The history of the crab salad has many variations, as well as the salad itself, but there are two main hypotheses. Since the salad initially became popular under the name Louis crab salad, its appearance was associated with the French King Louis XIV, a great lover of delicacies and fine dishes. Proponents of the second hypothesis claim that the salad appeared and became popular in the early 20th century in the United States and named it Louis salad in honor of Louis Davenport, an American entrepreneur and hotel owner in Washington state, from where the crab meat salad was sold on the menu of all restaurants on both the east and west coast of the United States.
Naturally, the original recipe included crab meat, not modern crab sticks, but the lack of natural crab meat on the shelves of Russian stores in the 90s and 00s led to the emergence of the so-called “Russian style” in crab salad recipes, which allowed the use of crab sticks, although everyone knew that they did not even smell of crab. The most popular variation was the recipe for crab salad, consisting of the actual sticks, sweet corn, chopped boiled eggs and fresh cucumber, seasoned with mayonnaise.
